Side Dishes

I am finally getting a system down for our dinners that is both simple and yummy. But I really struggle with side dishes. I feel like I just open a can of veggies and there you go. So I'm asking you for suggestions of good side dishes that you actually make for dinner.

Some of the ones that we have regularly are
1. tossed salad
2. green beans with beef bullion cube
3. corn
4. creamed corn
5. peas
6. black bean salad

And some we have occasionally when I remember to fix them
1. baked beans
2. steamed broccoli
3. coleslaw

I'm pretty sure I'm in a RUT. Help, please?

I want to read that email!! I need ideas too! BAD!!!
We actually use our steamer a lot... We have the kind that is on top of our rice-cooker... BUT those bamboo ones are super cheap and easy too :)
Anyway, any veggie I have, I throw in there and just let it steam while I make other stuff - Ms. Dash makes a great seasoning...

Anyway, looking forward to ideas from other people - I need help!!!

oh yeah, and eggplant! It's an easy side... you can just cut it up and put it in the oven with some olive oil - it's pretty good (same with asparagus - we used to do that all the time - it's slim pickin's here :))

So what's your new dinner method??

Yeah I use the steamer a lot too - broccoli, mushrooms, bell peppers, zucchini, green beans...any of these or a mixture. Or I stir fry them. I guess I'm in a rut too! :) Except for when I mix it up with the southern staples - corn on the cob, mashed or onion roasted potatoes, fried okra, fried zucchini, fried anything. :) Or baked beans, refried beans, cornbread or corn salad.

Zucchini and squash are good ideas. Stir fried or I have a great, easy casserole recipe for them that I can send you. We do a lot of potatoes as sides...mashed with Ranch powder or add some sour cream and top with cheese for a twice baked taste without the work. You could do a broccoli salad--the kind with raisins, bacon bits, sunflower seeds and a miracle whip dressing. And what about sweet potatoes? Those are good.
