Remember the
Giant Cupcake pan? My MIL gave it to me for Christmas (see sometimes it pays to put stuff you want on your blog) and I tried it out for the first time this weekend. I was a little nervous because I'm not the best baker or the most creative. I researched it a lot on the internet and bought double supplies hoping that would cover me. I had promised to bring the cake for my mom's birthday lunch on Sunday- I said a cake. It could be the giant cupcake cake or it could be the Bi-Lo cake we picked up on the way over there. No promises.
I got two cake mixes, whipped them right up and measured out exactly how much batter to put in each side of the pan. I turned the temperature down on the oven and baked it for longer.

I oh so gently sliced off the bumps that formed on the pieces while they baked and smooshed the rest together.

I purposely chose a chocolate cake so that I didn't have to ice the whole thing! I figured I could ice the top only and it would look like a cupcake. I'm glad I decided that b/c my wrist was really tired of squishing the icing on to the cake.
And viola- the first giant cupcake!

(I'm sitting here thinking I really need to learn how to take better food pictures)

No twins here (Thank you Lord- I'll take my babies one at a time). Erin is due with #3 early September. She is still skinny as all get out.

Kelley- that's an awesome cake. I'm impressed. And, way to go for Erin your sister. Between the two of you and your s-i-l, your family will be keeping the local hospital in business this summer!
I learned from Ina Garten that if you slice the top of the bottom part off, it will be flat, so the top part will smush on there better.
I SO want this cake pan now. Tell me where she got it. I'm thinking Nathan will be getting me one for mother's day.
The cake looks great! That's awesome. Too bad my oven is too small for such a thing. Guess I'll have to stick to cookie cakes.
If J wants a giant cupcake for his birthday, I will gladly make him one. I have the ingredients that I bought for the second cake (in case I messed up the first) still on hand.

kt- sure enough all three of us will probably deliver at three different hospitals. what are the odds?
erin g- i did slice of the bump of the bottom and since the top cooked upside down it had a slight bump too so I sliced it off too. I saved the sliced off cake. Its in a baggie in my fridge. I think it will taste good with ice cream.
I don't know where she got it. Susan- where did you get the cake pan? Eh she's probably not reading the comments. I'll try to remember to ask her.
SB- congrats on your boy! its not as big as it looks. I think if your small oven has a lower rack position that it would fit. The pan is only about 4.5 in high.
yeah I'm definitely getting it. I want to start a giant cupcake tradition in my house for birthdays.
I love the giant cupcake! That is way cool! I want a cake pan like that too...is it very wide? My oven isn't very wide. Let us know when you find out where she got it...that will be on my wish list too...and since we'll be in the states soon for a few months something someone can actually get me!!
