Oat & Almond Breakfast Bars

I am on a quest to [slowly] become healthier! Since giving up my cereal and milk for breakfast (b/c of Sienna's dairy intolerance), I've been eating a bagel every morning. I knew it wasn't the healthiest (and when I say healthiest- that's what I mean- not less calories but more nutritious) option so when I came across these breakfast bars I had to try them.

I realized in making these bars that I have moved a little away from normal people because it called for wheat germ and I already had some in my cabinet.

I actually prayed that the Lord would help me learn to love these bars and He has! I didn't love them at first but I look forward to them in the morning now. I honestly think my energy level is better after eating these instead of bagels or toast in the a.m.

Even though I didn't love them, other people geraldsusankiranjonathan ate them up! I only ate 5 of the first 20! Don't worry I made more! Will trade babysitting services for breakfast bars!

Oat & Almond Breakfast Bars
Makes 24 bars

1/2 c vegetable oil
1/2 c honey
2 tsp vanilla extract
1 lg egg
2 c old-fashioned oats, uncooked
3/4 c all-purpose flour
1/2 c packed light brown sugar
1/2 c sliced almonds
1/2 c toasted wheat germ
1/2 c raisins
3/4 tsp salt

1. Preheat oven to 350 degrees F. Line 13" by 9" metal baking pan with nonstick foil (If not using nonstick, lightly grease foil).
2. In 2-cup liquid measuring cup, stir oil, honey, vanilla, and egg until mixed. In large bowl, with fork, mix oats, flour, sugar, almonds, wheat germ, raisins, and salt until combined. With rubber spatula, stir honey mixture into oat mixture until blended; scrape into prepared pan. With wet hand, pat oat mixture evenly into pan.
3. Bake 30 to 35 minutes or until pale golden around edges. Cool completely in pan on wire rack, about 1 hour.
4. When cool, transfer using foil to cutting board. Cut lengthwise into 4 strips, then cut each strip crosswise into 6 pieces. Store in tightly sealed container at room temperature up to 2 weeks.

yum! Those sound good :) I REALLY need to find a new "breakfast" food - i'm totally going to try these :) I actually HATE breakfast foods... so I tend to avoid breakfast and them I'm starving at 10:00...then I eat something and then the whole day's meals are off schedule... so anyway, I need to get a new breakfast food - I can't wait to try this :)

Yes, I know I'm one of the few people in the world that doesn't like breakfast foods :) haha! We had a breakfast themed HF last night...
OK, I'm going on too much... the reason I even wrote this one is because I wanted to click that little box and I forgot to when I posted my last post... but I just realized that I could have deleted my post and re-posted it... but well, I already wrote so much... I'm done...

OK, so I just made it (you inspired me) :) I couldn't find any sliced almonds, so I chopped them myself (in my bullet blender) and they were almost pulverized :) haha! I also added in some pulverized walnuts... but the honey here is so gross to me! It has bite! So I thought (and my sweet tooth was guiding me) that I needed to add in something sweet :) So I added in some chocolate chips!! It's baking right now - I'll let you know if it's good :)

I haven't eaten Canadian bacon since I lived in Blowing Rock! Too expensive. I would love to resurrect that breakfast tradition though.

Do you have a Kroger? They have the packs on sale almost every week - I buy in bulk, haha.

I'm thinking I gotta try these. I'm a very healthy breakfast eater (my day usually goes downhill fast afterwards...) but these sound like they'd be a good snack for me during the day. Thanks for posting! Oh, and if Annabel brings the lactose/soy/planet earth allergies that Sienna suffers, you'll be the first one I ask recipes from!!

Can you drink rice milk? I am thinking about trying to make it myself. I have seen some recipies on the internet. These breakfast bars look good. I have been drinking smoothies lately but I may have to try these!

sar - I don't like breakfast food either, you're not alone.

kfc - I also keep wheat germ on hand since I make a lot of homemade granola to eat with yogurt. it's emily ball's dad's recipe (she's from mars hill - if you're from mars hill, you KNOW how to make granola) and it makes bars or loose granola. I'm happy to share it if you want. You'll have to skip the yogurt part though. :)

So I made them with chocolate chips instead of raisins this week and they are yummy. The bad part is that now I want to eat them for snacks and I won't have enough for breakfast all week.
